THE BREW BENCH / BREW

Hot brew. Cold cup.

Divide a flash-brew recipe into coffee, hot water and brewing ice without counting the same water twice.

Brew directly onto the recipe ice

Start with 20 g coffee, 200 g hot water and 120 g brewing ice: 320 g total water equivalent, or 1:16. Put the ice in a heat-safe server. Bloom with 60 g of the hot water, continue to 130 g cumulative, then finish at 200 g. Swirl to melt the recipe ice. Additional ice in the drinking glass will dilute the drink further as it melts.

Use a slightly finer starting grind than a full-hot brew and judge the result by taste. Reduced hot water can extract less. This arithmetic does not guarantee the same extraction or final volume as a hot recipe. Read the complete flash-brew method.
