Grind changes exposure and flow
Grinding divides the roasted seed into particles of different sizes. A setting never produces one perfectly uniform diameter. Fine particles, larger particles, burr geometry, wear, coffee and calibration can all affect the brew.
In a filter bed, grinding finer can increase resistance to flow as well as change extraction. In immersion, there is no identical draining bed during the steep. Match the starting range to the method, then tune the recipe.

Use these broad method cues
These visual cues are deliberately approximate editorial starting points. They help you enter the right neighborhood; they are not laboratory particle measurements or interchangeable click settings.
| Method | Starting cue | What to watch |
|---|---|---|
| Turkish/cezve | Very fine, powder-like | A method-specific grind; do not assume an espresso grinder reaches it. |
| Espresso | Fine | Dose, distribution, beverage yield and repeatable flow. |
| Moka | Fine to medium-fine | Follow the pot maker; do not tamp or use resistance as a target. |
| AeroPress | Medium-fine to medium | Recipe style, steep and gentle press; avoid forcing resistance. |
| Cone or flat-bottom filter | Medium-fine to medium | Batch size, filter fit, pouring and drawdown. |
| Automatic drip or Chemex | Medium to medium-coarse | Machine/brewer instructions and the size of the batch. |
| French press | Medium-coarse to coarse | Sediment, steep and gentle separation; a long steep can suit a different grind. |
| Cold immersion | Coarse as a first trial | Time, refrigeration, filtration and measured yield. |
The manual can give a more specific starting point
Baratza supplies the settings below in its manuals and explicitly expects users to adjust for recipe and preference. Check the model name carefully: a standard Encore and an Encore ESP have different adjustment systems.
The grind guide tool lets you look up the supported manufacturer starts by method. Keep the exact model and caveats with the number.
| Method | Encore | Encore ESP |
|---|---|---|
| Espresso | 8 | 15 |
| AeroPress | 12 | 22 |
| Hario V60 | 15 | 25 |
| Automatic brewer | 18 | 28 |
| Chemex | 20 | 30 |
| French press | 28 | 32 |

Why an exact conversion is misleading
The ESP uses smaller changes across settings 1–20 and larger changes across 21–40. A single arithmetic conversion from the standard Encore would hide that design difference. Even two units can differ in calibration and burr condition.
Burr versions matter too. Fellow publishes a separate guide for Ode Gen 2 Brew Burrs because the earlier Ode chart does not transfer directly. Record the grinder, installed burrs, calibration convention and setting together; treat another person's recipe as a starting experiment.

A practical adjustment loop
Keep the coffee dose and intended output unchanged for your first comparison. Taste after the drink has cooled enough to evaluate comfortably. The direction below is a test, not a diagnosis.
| Observation | First check | One possible next test |
|---|---|---|
| Fast flow and sharp, thin taste | Correct dose, filter fit and an even bed. | A small finer adjustment. |
| Slow or stalled drainage | Folded filter, fines buildup, agitation and batch size. | A small coarser adjustment with gentler pouring. |
| Drying, harsh drink | Roast preference, clean equipment, temperature and unevenness. | A small coarser change if the brew was also slow. |
| Strong but otherwise pleasant | Whether concentration is the actual problem. | Add measured bypass water before changing grind. |
| Results vary widely | Weighing, retained grounds, distribution and grinder condition. | Repeat the same recipe carefully before changing a setting. |
Adjust and clean as the maker instructs
Some grinders must be running or emptied before moving finer. Follow the exact manual and keep hands away from moving burrs. Unplug before the cleaning or disassembly the maker permits.
The Baratza manuals distinguish washable removable plastic parts from burrs, which should not be washed in water. Do not transfer a cleaning instruction to another grinder, use uncooked rice as a default cleaner, or assume an upgrade preserves its old setting scale.
